Owner, boss, head chef and creative force behind Palm Cove's iconic beach shack style asian seafood restaurant. With nearly 30 years in the kitchen, Brian has created a restaurant that catalogues his culinary exploits across South East Asia combining it with a laid back beach vibe "fine dining without all the fuss of table cloths and aircon!"

Tell us your favourite local place to eat/drink that is not your own.

There are so many places I like, but to narrow it down, the Reef House is great for the eclectic menu, impeccable service and also being close to home. If I'm heading to the city I can't resist dropping in to Hemingway’s at the Wharf, it's the antithesis of beach side and a cold one by the inlet is a perfect antidote to the frantic furnace of my own restaurant kitchen.  Honourable mentions should go to The Chambers, as my favourite breakfast destination, and to Ochre for setting such high standards for the industry.

What's your favourite local place or activity to unwind?

If not a cold beer, by the Trinity Inlet, then making music, I’ve been a musician for as long as I can remember and can while away many hours combining my love of technology with musical creativity.

I go to Rusty's every week, you can't beat the Asian market vibe and I'm always surprised at what I can find!

Recommend a local business that has given you outstanding service.

Hands down, this has to be Rob 7 Automotive Repairs in Bungalow. Rob is a great character, as straight as the day is long and always there to help.  He and his wife run a great place, always pleased to see you and he and his team have saved me thousands.
