My Little Bakehouse puts Cairns on the national pie map—with flavour, flair, and decades of quiet mastery.
By David Leith
There’s a kind of magic to walking into My Little Bakehouse. Not the woo-woo kind. The real kind—where the scent of warm cinnamon donuts mixes with freshly pulled espresso, and flaky pastries glisten behind the glass like edible jewellery. You could be in Melbourne. Paris. Berlin. But no—you’re in Cairns, and the baker behind it all is Sean Arnold: a man with 23 years of full-tilt, hands-in-dough experience who just put our city squarely on the national baking map.
Ten pies entered. Nine medals returned. One very large spotlight pointed right at Grafton Street.
But let’s be clear—this didn’t come out of nowhere. Sean started in kitchens at 12, launched into his apprenticeship at 17, and has been on a flour-streaked trajectory ever since. From artisan bread to patisserie, high-end hotels to specialty cafés, he’s done the rounds. In 2017, he opened My Little Bakehouse in Manunda. The first day’s takings? $87.50. “It was humble,” Sean grins. “But it was ours.”
Fast forward to today, and the business has expanded across locations and into a high-traffic CBD shopfront—once the home of Meldrum’s Bakery, a Cairns institution for 45 years. And in a rare twist of professional grace, the Meldrum family offered not just the lease, but mentorship. “They said, ‘If you want to learn how to do pies properly, we’ll show you,’” Sean recalls. “So they did. Forty-five years of pie-making wisdom handed down, one bake at a time.”
It worked. That first foray into competition? A gold medal for the “Taste of Italy” pie—layered with béchamel, tomato, feta, and spinach. The Cheeseburger Pie, with its torch-seared double patties and Korean honey mustard, also won accolades. Others drew inspiration from Korean kimchi stews, Indonesian curries, satay chicken with macadamia, and even a classic white-sauce chicken with cheese. High-concept, high-craft, and all made in-house.
But don’t let the awards distract you—this place is so much more than pies.
There’s the bread, for starters. Real bread, made from scratch: white sandwich loaves, garlic sourdough, Nutella-stuffed pull-aparts, multigrain and rye, even a fruit-and-nut sourdough that deserves its own fan club. Baked fresh on Tuesdays, Thursdays, and Saturdays, it’s the kind of loaves that make toasters purr.
Then there’s the viennoiserie—croissants, pain au chocolat, cinnamon scrolls—and an ever-rotating roster of small cakes and pastries. Sean’s sponge cakes are textbook, light enough to float away if not anchored in cream. His ganaches are made from scratch. His vanilla mousse, used in the showstopper croissants and éclairs, is whipped with single-origin vanilla bean paste hand-harvested from the Daintree.
And let’s talk about those cinnamon donuts: fried fresh daily, rolled in sugar, and eaten before they even make it to the bag.
Feeling guilty? Good. You’ll be back tomorrow.
The shop also offers last-minute birthday cakes (“We save relationships,” Sean jokes), catering trays of mini quiches and sausage rolls, iced coffees using locally roasted beans, and enough pastry variation to make a French baker blush.
And everything—everything—is made on-site. “It’s how we maintain consistency,” Sean says. “There’s no cutting corners. We make it all ourselves. No excuses.”
Local sourcing plays a big part in that ethos. From Divine Vanilla’s hand-picked beans, to Tattooed Sailor Coffee Roasters' Icebreaker espresso blend, to Byrnes Meats' burger patties, Sean makes a point of keeping it regional wherever possible. “It’s about flavour, but it’s also about integrity. If it’s not right, we only have ourselves to blame.”
Yet despite the meticulous craft and relentless output, the atmosphere in the shop is far from high-strung. It’s warm. Cheeky. Real. Sean credits his team. “A lot of staff have come and gone over the years, but we’ve always kept it consistent—for the customers. That’s what matters.”
So what’s next? More pies. Maybe a lasagna version. Maybe spaghetti bolognese. Maybe something nobody’s ever thought to put in pastry before. But always, it’ll be made here, by hand, in Cairns.
Because this isn’t just a bakery. It’s a love letter to local flavour, local talent, and the kind of old-school commitment you can actually taste.
And in a city still clawing its way through post-flood recovery, staff shortages, and rising costs, My Little Bakehouse isn’t just surviving. It’s thriving.
That’s worth celebrating. Preferably with a pie in each hand.
