After nearly four decades shaping Cairns’ culinary and tourism scenes, Gary Low—the quietly tenacious force behind Dundee’s Restaurants—has announced his retirement from day-to-day operations. But don’t expect him to disappear into a hammock just yet.
Low, who became sole owner of Dundee’s in 1989, has seen the restaurant through every twist and turn of the region’s evolution—from boom-time backpacker surges to the silent strain of pandemic-era dining. Through it all, Dundee’s on the Waterfront has remained a stalwart: dependable, delicious, and locally loved.
“It’s been an incredible journey,” said Low. “From the very beginning, it’s always been about the people—our loyal customers, hardworking team, and supportive partners.”
With Low stepping back, long-time General Manager Tina Wort and her husband, Executive Chef James Wort, will take the reins, supported by Tina’s mother and seasoned administrator Marion Wright. The transition ensures Dundee’s remains a proudly family-run affair, grounded in the values that have made it an institution.
Part of the transition includes the upcoming closure of Dundee’s at the Aquarium. The city’s unique dining-inside-a-reef experience will serve its final guests on Sunday, 20 July 2025, with a festive “Farewell Sunday Sesh” planned to mark the occasion.
But even as he exits the fine dining spotlight, Low is charting a new course—this time toward the more casual, hands-on side of tourism. His latest venture, Grab-A-Barra, is a purpose-built catch-and-keep fishing experience designed to connect locals and visitors alike with one of FNQ’s most iconic species: the mighty barramundi. Equal parts education, fun, and fish-fueled thrill, the operation is set to lure in new audiences looking to wet a line without leaving town.
Back on the Inlet, Dundee’s on the Waterfront will relaunch its popular Waterfront Brunch on Monday, 28 July, reaffirming its commitment to celebrating tropical produce in its natural setting.
“We’re incredibly excited about the next chapter,” said Tina Wort. “Gary’s leadership has been instrumental, and his vision will continue to guide us. He’s not just a mentor—he’s family.”
