A fresh new dining destination has landed on the Cairns waterfront, bringing an exciting blend of Peruvian and Japanese (Nikkei) cuisine to the region. Sails by Hemingway’s, the latest venture from the team behind Hemingway’s Brewery, officially opened its doors this week, welcoming food lovers to experience a unique fusion of cultures and flavours.
We were among the lucky guests at the exclusive launch event, where Head of Hospitality, Roman Haslinger set the tone for a vibrant evening of shared plates, bold flavours, and ocean-fresh produce. Head Chef Karel Polo Solis, a Peruvian-born culinary talent, has crafted a menu that pays homage to his heritage while embracing the best of Far North Queensland’s local seafood.
Expect dishes that pack a punch—think octopus, oysters, coral trout, and nannygai, enhanced with zesty citrus, spice, and umami-rich Japanese influences. "The seafood is the hero, and everything else ties it together," Chef Solis explained, describing his vision for a dining experience designed for sharing.
Located adjacent to Hilton Cairns in the beautifully refurbished former Mondo’s site, Sails by Hemingway’s offers stunning waterfront views to complement its bold menu. The space has been transformed into a modern yet relaxed venue, perfect for long lunches, sunset drinks, and lively evening feasts.
The concept of Nikkei cuisine dates back to the 1800s, when Japanese immigrants in Peru adapted their traditional cooking techniques using locally available ingredients. The result? A unique fusion of delicate sashimi-style preparations, punchy Peruvian spices, and the freshest seafood—exactly what Sails by Hemingway’s delivers.
With service running seven days a week from 12pm to 9pm, plus an extended bar service into the evening, this is set to become a must-visit for locals and tourists alike.
