Davy O’Rourke truly embodies the spirit of Cairns’ culinary scene. With a portfolio that started from a small cake stall at Rusty’s Markets in 2008, Davy's rise to hospitality prominence has been fueled by a blend of cultural heritage, innovative concepts, and a deep commitment to community. Inspired by his Papua New Guinean roots and family traditions, he launched Mama Coco in Westcourt, which has become a beloved local cafe celebrated for its warm, home-like atmosphere and inventive tropical-inspired dishes. This establishment set the stage for Davy's unique approach to hospitality: a seamless mix of culinary creativity and heartfelt hospitality.

Beyond being a chef, Davy is also a prolific restaurateur, joining forces with partner Sam Byrd to bring diverse dining experiences to the Cairns area. Their ventures, including Hopscotch in Earlville and Palooka in Freshwater, each bring something distinct to the table. Hopscotch offers a friendly, laid-back vibe with elevated pub classics that spotlight regional ingredients, while Palooka serves up contemporary European fare, emphasising refined, locally-sourced cuisine in an elegant suburban setting. These venues underscore Davy's commitment to making each restaurant a community hub, carefully crafting both menus and atmospheres to resonate with their neighbourhoods.

Davy’s dedication to his craft is evident in his hands-on approach; he immerses himself in every detail, from concept development to daily operations. His background, having trained under acclaimed chef Tetsuya Wakuda, further honed his culinary finesse, which shines through in his ventures. At Guerrilla in Edge Hill, Davy explores South American flavours, showcasing his flair for relaxed, modern dining. Recently, his culinary heritage took the spotlight on Tastes of the Tropics, where he celebrated his family’s traditions by preparing a Papua New Guinean Mumu alongside his mother, Wawa, blending it with FNQ flavours in a heartfelt tribute to his roots.
