Craft brewery group Sauce Brewing Co. has made the decision to close operations here in Cairns. The venue sold off its brewing equipment in Cairns last year and never entirely managed to get the traction required to meet costs and brew here in the north. Beer lovers will no doubt miss the eclectic and innovative style of beers that the Sauce brought to the region and their bottle shop, OutSauce Liquor, which specialised in stocking small batch and interesting craft beers from local and domestic producers. Mike Clarke, owner and co-founder of the Sauce group, cited rising costs and an insufficient income to sustain this northern venture. The home of the Sauce in Marrickville will be unaffected. Mike is quoted as being 'devastated' by the decision to close but does not completely rule out a return to Cairns should market conditions change. You can get your last drink in at the Sauce up until the end of June.
